Warm Bean, Lentil and Rice with Lime Vinaigrette

2 cups cooked Butter beans
2 cups cooked Kidney beans
2 cups cooked black Lentil
1 cup cooked rice
1/2 cup chopped green peppers
1/2 cup chopped red onion
1/2 cup cooked corn
1 cup halved cherry tomatoes
Chopped parsley to garnish

Mix together all the ingredients while warm add the Vinaigrette and garnish with parsley and serve as a main dish or a side with your grilled protein.

6 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice
Pinch of pink salt
A turn of freshly ground black pepper

Add all of the ingredients to a small mason jar, screw on the lid, and shake until blended. You can also whisk the ingredients together in a bowl or whiz them together in a blender.🥗
