4 cups sifted cake flour
60 ml sugar
4 ml bicarbonate of soda
4 ml baking powder
5 ml salt
160 ml sunflower seed and pecan mix chopped
(leave these out for a more traditional soda bread)
480 ml cups Amasi/Sour Cream
Preheat oven to 180 degrees C
Mix the dry ingredients together well.
Stir in the seed nut mix and amasi.
Mix together to form a sticky dough.
Turn out onto floured board and knead until smooth
(8 – 10 times – don’t over-knead.)
Line a 355 x 70 x 12 mm loaf pan with baking paper and add the dough.
Spread the dough out in the pan.
Bake for about 65 minutes.
Remove the bread from the oven to cool and serve.
